Fletcher’s Brooklyn Barbecue
Bill Fletcher had a dream and that dream was not going to be deterred, not by Sandy nor this week’s Nor’easter. After years touring the Northeast BBQ circuit and racking up awards, Fletcher has teamed with former R.U.B. pitmaster Matt Fisher to open this eponymous ode to slow-cooked meat in ever-booming Gowanus. You may know her as a participant on Top Chef Masters and the Next Iron Chef but San Francisco native Elizabeth Falkner cut her teeth in the pastry world with spots like Citizen Cake. Now she’s hitting NYC and bringing pizza – yes pizza – to Brooklyn. Expect pizza ovens turning out Neapolitan and Sicilian pies plus pastas with a Southern Italian bent. Graduating from Smorgasburg to brick and mortar, Skytown is bringing a focus on local produce to under-served Bushwick.
